The technically correct name for the dried and fully fermented seed of Theobroma cacao, also known as the cocoa bean or simply cocoa, is cacao, from which cocoa butter and cocoa solids can be extracted. Chocolate is made from cocoa beans that come from the Amazon rainforest, and Mesoamerican foods like tejate, an indigenous Mexican drink made with maize, and pinolillo, a similar Nicaraguan drink made with cocoa powder and cornmeal, are made from cocoa beans.
